a| In the run-up to the Prussian-Austrian War of 1866, Lina Morgenstern developed the proposal to alleviate the impending social consequences of the war by setting up commercial kitchens and serving meals at cost price. After a corresponding call for the establishment of people's kitchens in Berlin, the Association of Berlin People's Kitchens was founded; the first one was opened on 4 July 1866. She also accompanied this initiative with her writing - in 1868 her book on the people's kitchens was published, which also listed recipes that had been tried and tested in these kitchens. Later, this became the Illustrated Universal Cookbook.
